Molten Lava Cake

2 sticks of butter (1 cup)
4 teaspoons sugar 1/2 teaspoon ground cinnamon
12 oz. chocolate, chopped (you can use milk or semi-sweet, whatever you prefer)
1 cup flour
2 1/2 cups powdered sugar
6 large eggs
6 large egg yolks
1 1/2 teaspoons vanilla

-preheat oven to 400 degrees. butter ramekins and sprinkle each with about 1/2 tsp sugar
-in a saucepan combines butter, cinnamon and chocolate over low heat until melted smooth, stir frequently. cool slightly
-in a large bowl whisk together flour, powdered sugar, eggs and egg yolks and vanilla until creamy. add the melted chocolate to the batter and whisk together.
-pour into prepared ramekins
-bake cakes until the top is stiff and cracked and the edges are dark; about 12 minutes. remove from the oven and let cool for 5 minutes. loosen the edges of the cake with a small paring knife then invert them onto plates while warm.

notes: i just serve them in the ramekins. also cook them as long as you like; less means more runny and cooking more means more cakey consistency. i like in between myself. and just watch them because all ovens are different. and for the chocolate i just use a bag of high quality chocolate chips. and these cakes are SUPER SUPER SWEET so i'll use semi-sweet chocolate chips next time.
